Quesdillas are everyone’s favorite and this is a big-boy pants version where you can get your brew on.
TIP: For a vegetarian option, replace chicken with beans.
HARDWARE: 12″ Saute Pan, Spatula

2 tablespoons Just+Add Beer Fiery Mexican Tres Chiles
1 tablespoon Kolsch Golden Ale or Your Favorite Golden Ale
3.5 ounces Just+Add Beer Pulled Chicken Thighs (See Drunken Chicken Flautas recipe)
2 ounces Shredded Queso Quesadilla (or Your Favorite Shredded Cheese)
4 Corn Tortillas
1/4 medium Red Onion (diced)
1/2 cup Red Onion (diced)
6 Sprigs Cilantro
2-3 tablespoons Vegetable Oil or Butter
STEP 1: MAKE SAUCE
Combine 2 tablespoons Just+Add Beer Fiery Mexican Tres Chiles with 1 tablespoon Kolsch Golden Ale or your favorite Golen Ale. Reserve for dipping.
STEP 3: ARRANGE TORTILLAS
Add vegetable oil or butter to 12″ sauté pan. Over medium heat, arrange your tortillas are all in equal contact with the pan. Flip flat tortillas once before adding any ingredients to evenly coat with oil or butter.
STEP 5: ADD CHEESE
Add a layer of cheese to each tortilla, using half the cheese.
STEP 4: ADD INGREDIENTS
Add chicken, onion and cilantro. Add second layer of cheese, using other half of cheese.
STEP 5: FOLD
Fold the quesadillas over with a spatula to make a half circle shape. Press gently to ensure all ingredients are spread evenly.
STEP 5: COOK & SERVE
Arrange your quesadillas on a plate, garnish with red onion and cilantro. Dip them into sauce or spoon sauce over the quesadillas. Now dig in for a NEW MOUTH ADVENTURE!
