HOPPED-UP HUEVOS RANCHEROS

This is a tasty and satisfying Mexican breakfast. Tortillas, beans & eggs, bacon – and your favorite Porter. Boom.

TIP: Cook the eggs however you like. Runny yolk, scrambled or over hard egg – your pick!

HARDWARE: Skillet, Mixing Bowls, Sauce Pan

YIELDS 2-4 servings
PREP & COOK 30 minutes
READY IN 45 minutes

INGREDIENTS:
1/2 jar Just+Add Beer Fiery Mexican Tres Chiles
1/4 cup Rogue Mocha Porter or Your Favorite Porter
8 Eggs
8 Strips Bacon
1 pack (20) Corn Tortillas
1 can Refried or Black Beans
2 medium Red Onion
2 medium Limes
1 block Cotija Cheese (crumbled)
1 bunch Cilantro
to taste Salt & Pepper

STEP 1: MAKE SAUCE

Combine 1/2 jar Just+Add Beer Fiery Mexican Tres Chiles + 1/4 cup of Rough Mocha Porter or your favorite Porter. If you like it saucy – DOUBLE IT!

STEP 2: COOK BACON

Fry bacon in a pan over medium heat. Reserve pan with bacon fat to shallow fry tortilla.

STEP 3: MAKE BEANS

Over medium heat, warm beans up, adding 1 onion (diced), half bunch chopped cilantro and 6 tablespoons sauce mix. Add salt and pepper to taste. Simmer for 15-20 minutes.

STEP 4: SHALLOW-FRY TORTILLAS

Over a medium/high heat, shallow fry the tortillas in the bacon pan for about 30 seconds per side or until your desired crispiness.

STEP 5: COOK EGGS

This dish is traditionally served with eggs over-easy, but freak the eggs however you like!

STEP 6: PLATE & SERVE

Build this dish in layers: Lay down tortillas first, and then add beans, sauce, eggs, crumbled cheese and top-off with chopped cilantro. Enjoy with the rest of your Rogue or your favorite beer.
