LOADED TOTCHOS

In honor of National Tater Tot Day (Feb 2), we decided to throw-down one of the best combinations on the planet: Tater Tots + Nachos – or as they call ’em nowadays: “Totchos.”

TIP: There is no way to overload these with toppings – the more the merrier

HARDWARE: Sheet pan, Skillet, Knife

YIELDS 6-8 Servings
PREP & COOK 45 minutes
READY IN 45 minutes

INGREDIENTS:
1/2 jar Just+Add Beer Fiery Mexican Tres Chiles
1/4 cup Brooklyn Brown Ale or Your Favorite Brown Ale
1 32-ounce bag Ore-Ida Tater Tots (Regular)
1 pound Ground Beef
1-1/2 cups Shredded Cheese
1/2 can Refried Beans
10-15 Cherry Tomatoes (cut in halves)
1/4 small Red Onion (diced)
1-2 Fresh Jalepeños (sliced)
1/2 cup Pickled Jalepeños
1/2 medium Avocado (cubed)
1/2 can Black Olives (sliced) (optional)
Pinch Scallions (diced) (optional)
1-2 wedges Lime (optional)
Salt and Pepper to taste

Plus, for the topping Sloshed ‘n Spicy Crema (optional):
4 tablespoons Sour Cream
2 tablespoons Just+Add Beer
2 tablespoons Brooklyn Brewery Brown Ale
GET RECIPE 

STEP 1: MAKE SAUCE

Preheat oven to 425 degrees. Then make sauce by combining 1/2 jar Just+Add Beer Fiery Mexican Tres Chiles + 1/4 cup Brooklyn Brewery Brown Ale or Brown Ale of your choice. Set aside.

STEP 2: MAKE TOPPING

See our recipe for SLOSHED ‘N SPICY CREMA for a perfect topper. Make and set aside.

STEP 3: PREP TOPPINGS

Get your Totcho bar ready! Chop and dice tomatoes, onion, olives, fresh jalepeños and avocado. Set aside.

STEP 4: COOK MEAT

Brown 1 pound of ground beef. Season with salt and pepper to taste.

STEP 5: 1/2 BAKE TATER TOTS

Remove the 32-ounce bag of Ore-Ida Tater Tots from the freezer, open and spread evenly on sheet pan. Place in oven at 425 degrees for 12-15 minutes.

STEP 6: ASSEMBLE TOTACHOS

After 12-15 minutes in the oven, remove sheet pan full of Tots and build Totchos:

First drizzle with 1/3 of Just+Add Fiery Mexican Tres Chiles sauce mix, then sprinkle with 1/3 of cheese, add ground beef, refried beans, another 1/3 of the cheese and sauce mixture, then black olives (optional), tomatoes and pickled and fresh jalepeños and top off with the remaining cheese and sauce mixture.

STEP 7: FINISH BAKING

Return the fully-loaded tots back to the oven to bake for another 12 minutes or until cheese is melted and Tots are crispy.

STEP 8: PLATE & SERVE

Remove Totchos from the oven and let cool for 2-3 minutes. Then, scoop with spatula or spoon into a bowl and garnish with SLOSHED ‘N SPICY CREMA, avocado, scallions and lime (optional). Pour the remaining Brooklyn Brown Ale into a glass (or pop-open a new one) and grub. Mmmm mmm mmm.
